Owners of The Store, Ortolana and Milse among others, The HIPGROUP has always put a strong focus on sustainability, seasonality and providing high-quality produce, and their butchery meats are no exception. Sourced from local family-run farms, their butchers follow a nose-to-tail philosophy, utilising as much of the animal as possible and as a result, very little goes to waste.
You can find The Butcher at La CIgale's city farmers market on a Sturday from 8am - 12.30pm.
